  1. Heat the oven to 200°C Fan/400F/Gas 6.
  2. In a pan melt the butter
  3. In a food mixer blitz the bread into breadcrumbs (you could use a grater but that would take some time)
  4. Mix into the breadcrumbs the parsley, mixed herbs and finely grated lemon rind and juice. Season with a little salt and pepper
  5. Add the melted butter to the mixture
  6. Mix the egg and milk together and add a little at a time to the breadcrumbs – enough to bind the mixture together.
  7. Add the mixture to an oven proof dish and cook at 200°C fan for about 40 minutes or until its browning on top.
Recipe Notes

We usually bake this in a big dish and serve the whole thing in the middle of the table; you could also form it into balls and cook on a baking tray if that’s your preference.
