Gluten Free Stuffing is a must for roast dinners (or Christmas).
My mum always made a home made stuffing for Christmas Dinner and I was worried that a gluten free alternative just wouldn’t be as good. However my mums recipe was simple to adapt by using gluten free white bread. Simple recipe, but very tasty! There are decent gluten free stuffings for sale if you don’t have the time, but home made stuffing is always the best.
I usually make this on Christmas Eve and keep it in the fridge, then its ready to cook on Christmas Day with no fuss or effort. It’s one less job to do on a busy day in the kitchen; you just have to pop it in the oven with the veggies and it’s ready to go in about 40 minutes.
In a food mixer blitz the bread into breadcrumbs (you could use a grater but that would take some time)
Mix into the breadcrumbs the parsley, mixed herbs and finely grated lemon rind and juice. Season with a little salt and pepper
Add the melted butter to the mixture
Mix the egg and milk together and add a little at a time to the breadcrumbs - enough to bind the mixture together.
Add the mixture to an oven proof dish and cook at 200°C fan for about 40 minutes or until its browning on top.
Recipe Notes
We usually bake this in a big dish and serve the whole thing in the middle of the table; you could also form it into balls and cook on a baking tray if that's your preference.
